Do you love banana bread but wish it can be even more healthier? I think I found the right recipe hack in my kitchen! My mom asked me to bake my usual banana bread, she loves it to bits. But as for me, I wanted to make a healthier & more nutritious version that I can happily indulge in – without thinking of all the oil, sugar, and white flour!
Try this recipe for a fiber-richer and healthier option.
Healthy Banana Oatmeal Bread Recipe by Mommy Lace
Dry ingredients:
– 1 cup flour (you can use whole wheat flour)
– 3/4 cup rolled or instant oatmeal
– 2 tsp baking powder
– 1/2 tsp baking soda
– 1/4 tsp salt
Wet ingredients:
– 4-6 big bananas, mashed
-2 eggs (I use my own chickens’ eggs)
– 1/3 cup coconut sugar
– 1/4 cup coconut oil
– 1/4 cup plain yogurt
– 1 tsp Vanilla flavor
Instructions:
1. Mix dry ingredients together
2. Mix wet ingredients together
3. Add wet ingredients to dry ingredients
Transfer mixture in a small loaf pan, this recipe can make 2 loaves. Tip: Use a baking sheet to line your pan so the bread doesn’t stick. Bake for 20 minutes at 177C. Cool before tipping the loaf pan over so you get a perfectly shaped loaf.
Mommy Lace notes:
I used regular flour because I couldn’t find the wholewheat version in supermarkets. You can use any oatmeal you have in the kitchen provided they are not flavored. Coconut sugar is available in supermarkets in the Sugar section. I am currently using Nutri Oil of Magnolia which is labeled pure coconut oil, other brands I saw are SM Bonus and Minola. For the yogurt, I just used Nestle plain yogurt (unflavored), you only need the smallest size.
