If there is one thing I can eat forever, that is chicken. Growing up with this meat, I know lots of ways to cook it – from tinola, curry, to simple fried chicken. It is a staple on our freezer and on our plates.

Now I am a mom, I learned that there’s more to chicken than just flexibility & versatility in terms of recipe and preparation time. I remember many old folks advised me to eat chicken tinola to produce more breastmilk for my little boy. We prepared it with lots of papaya which also induces lactation according to some.

Although chicken is healthy, the way you prepare it also counts. It’s best to prepare chicken with leafy vegetables. I like preparing chicken with potatoes, bell peppers, tomatoes, and spices when making chicken marsala.

In the meantime, I would like to share one of my best chicken recipes –
Mommy Lace’s Chicken in Curry and Tomato Sauce.
You’ll need:
1 can of coconut milk
1 pack tomato sauce
curry powder
nutmeg powder
chili powder
small cut chicken parts
garlic, onion, bell peppers
potato
1. Fry the chicken parts in a little amount of vegetable oil until they are cooked. Remove from pan. Fry the potatoes next, remove from pan.
2. Saute garlic, onion on the same pan until brown and clear. Put 2 teaspoons of curry and 2 teaspoons of chili powder. Depends on your taste actually. Put a dash of nutmeg and cinnamon powder too if available.
3. Mix the spices together into a paste. Pour coconut milk and tomato sauce.
4. Pour in the chicken you fried earlier. Season with salt and pepper.
5. Stir until sauce is thick and chicken has absorbed the curry-tomato sauce.
Serve with a smile.
