Meat-Free Sun Dried Tomato Pasta Recipe

Nothing says weekend than a homecooked pasta dish. This recipe is one of the dishes that shapes our small family’s bonding moment. It’s super fast to make with simple common ingredients that you’ll normally find in your kitchen. To make this recipe special, I used 500grams of San Remo Wagon Wheels pasta.

This is a great shape for the family and it will help to make mealtimes a lot more fun with the kids! Wagon Wheels are incredibly versatile and will be a real favorite for kids and will definitely bring back memories for parents. Let’s start cooking!

Ingredients for Sundried Tomato Pasta Recipe:

500 grams pasta (any shape or kind will do)
4 cloves garlic sliced
1 cup sun dried tomatoes  (bottled)
1 /2 cup sliced black olives (bottled)
1 can green peas (optional)
Malunggay leaves (optional)
1/2 cup olive oil

How to cook Sundried Tomato Pasta:

1. Cook pasta according to package instructions. Boil the water first, add the pasta. It usually takes 11 minutes to get firm pasta noodles that are just right. Drain and rinse with tap water to stop pasta from cooking. Place pasta on a big serving dish.

2. This is the sauce: Saute garlic in olive oil. In goes your sun dried tomatoes, olives, peas, and malunggay leaves. Saute for up to 5 minutes. Turn off the heat.

3. Pour the sauce on top of the cooked pasta. Toss lightly to avoid destroying the pasta shape. Grate some cheese on top and sprinkle with black pepper to taste.

 

Isn’t that super fast? Sun dried tomatoes are available in supermarkets now. Rustans has the same brand I get in Australia called “Always Fresh” but nowadays there are other brands you can get and even online. They’re a good investment for your pantry, not that they’re expensive but in Filipino kitchens, we seldom have this ingredient. Now I always make sure to have it together with bottled olives.
