March has been very warm and it’s harder to cook in the kitchen. These days, simple but healthy recipes are a priority in my kitchen menu. Here are two dishes we recently enjoyed outdoors:
Prawn and pesto pasta salad
Prawn and pomelo with greens salad
I got the ready-shelled prawns from S&R Imus which are on sale at P484.95, you just have to thaw the prawns in time. My technique is to thaw them once then break them into smaller containers. Once thawed, you can drop the prawns in boiling water. Note that these prawns are already shelled and deveined.
Some want their prawns juicy while others like them thoroughly cooked. Strain the prawns and include them in your favorite summer recipes for a quick protein ingredient.
S&R has a lush garden of greens! On my last visit, I got a buy 1 take 1 deal on romaine lettuce, so keep your eyes open in the greens section.
Mommy Lace tip: This summer, make an effort to feed even more greens to your family – especially to older adults. This will help reduce hypertension especially when the weather gets really hot!

Pacific Bay Soft-Shell Crabs P399.95 – I was so tempted to buy these and deep fry them! My knowledge of how to use soft-shell crabs are still limited so I will look for recipes first.

Serving seafood this season makes you feel like you are on a grand resort vacation but minus the expense. Ingredients like these allow me to prepare seafood dishes for the entire family and cook it to our taste & liking.
Not seafood but something I took advantage of is this Bounty Fresh Chicken Thigh deal P151.95.
I usually just marinate these chicken thighs overnight and then put them into the turbo roaster. This doesn’t take a lot of time in the kitchen and cooks by itself. Instant summer barbecue for the family!
Spending less time in the kitchen means spending more time outdoors where it’s breezy (plus save on electric bills). Lately, I’m making an effort to do more picnics. It’s a cheap way to enjoy summer while getting us active.

For my husband who knows how to skateboard and I wish I do too, this full Canadian Maple Skateboard is a new find at P1,499.95.
We do not have grand plans for the summer like going out of town or to the beach, but with a little creativity in terms of food and activity – we really are enjoying this simple summer a lot!
